  1. Soup.
  2. 2 onions.
  3. 2 cloves garlic.
  4. 1 inch piece of ginger.
  5. 600 g squash.
  6. 600 g sweet potato.
  7. 300 g red lentils.
  8. 2 large red peppers.
  9. 400 g chopped tomatoes.
  10. 1.5 litres vegetable stock.
  11. 2 tbsp curry powder.
  12. Salt & pepper to season.
  13. Serve with.
  14. Sourdough toast.

Step by step how to cook Autumn Soup 🍁🍂:

  1. Finely chop onion, garlic and ginger. Fry for 5 minutes..
  2. Chop squash, peppers and sweet potato into 1cm chunks..
  3. Add all the veg to the pan. Add lentils as well. Mix thoroughly..
  4. Add stock, chopped tomatoes and curry powder. Cook for at least 30 minutes until veg is tender (longer the better, I cooked for 45 minutes)..
  5. Serve with some nice toast and any steamed green veg you fancy..
