Ingredients for Autumn Soup 🍁🍂:
- Soup.
- 2 onions.
- 2 cloves garlic.
- 1 inch piece of ginger.
- 600 g squash.
- 600 g sweet potato.
- 300 g red lentils.
- 2 large red peppers.
- 400 g chopped tomatoes.
- 1.5 litres vegetable stock.
- 2 tbsp curry powder.
- Salt & pepper to season.
- Serve with.
- Sourdough toast.
- Kale.
Step by step how to cook Autumn Soup 🍁🍂:
- Finely chop onion, garlic and ginger. Fry for 5 minutes..
- Chop squash, peppers and sweet potato into 1cm chunks..
- Add all the veg to the pan. Add lentils as well. Mix thoroughly..
- Add stock, chopped tomatoes and curry powder. Cook for at least 30 minutes until veg is tender (longer the better, I cooked for 45 minutes)..
- Serve with some nice toast and any steamed green veg you fancy..
