Ingredients for Gluten-Free Mushroom Chicken:

  1. 1 tbsp grapeseed oil or olive oil.
  2. 1 medium onion (sweet or spanish) chopped.
  3. 1 packages sliced mushrooms.
  4. 1/2 cup vegetable broth.
  5. 1/2 cup white wine.
  6. 1/2 cup milk (skim or 1%).
  7. 1 bay leaf.
  8. 2 tbsp gluten-free all purpose flour.
  9. 1 salt and pepper to taste.
  10. 2 large chicken breasts.

Step by step how to cook Gluten-Free Mushroom Chicken:

  1. Sear the chicken on both sides in a skillet and set aside (approx. 3 min. on each side) at medium heat..
  2. Sautee the chopped onion and grapeseed oil in the skillet until the onion is transparent (approx. 5min.)..
  3. Add the mushrooms and cook for another 3 min..
  4. Add the wine and vegetable broth and bay leaf, salt and pepper to taste..
  5. Once the sauce is simmered, add the milk. when the milk has warmed up and started to simmer add the gluten-free flour (mix a small amount in a separate dish first to make a paste, then add to the skillet sauce)..
  6. Put the chicken into the sauce and let it simmer with the lid on for about 12-15 min..
