- 1.5 cups all purpose flour.
- 1 tsp baking powder.
- 1 tsp baking soda.
- 1 stick butter or1/2 cup oil.
- 3/4 cup granulated sugar.
- 3/4 cup thick yogurt.
- 1/2 cup orange juice- freshly squeezed.
- 2 tsp orange zest.
- 1 tsp vanilla essence.
- Handful or some more dried cranberries (dust them in all purpose flour to avoid sinking down in the cake).

- Preheat oven to 180 degrees. Take a loaf pan and grease it well. Sieve all the dry ingredients in a bowl..
- In another bowl beat butter/oil and sugar till light and fluffy. Add the orange zest and vanilla to the beaten mix..
- Mix yogurt and orange juice together and add to the oil sugar mix Now fold in the dry mixture slowly to the liquid mix of ingredients..
- Add cranberries to the batter and mix lightly.
- Gently pour the cake batter into the loaf pan and bake at 180C degrees for 25 to 30 minutes..
- Do the skewer test in the center to check if cake is done..
- Remove from the oven and let it cool before slicing..
