Ingredients for Roasted Herby Potatoes:
- 8-10 Baby new potatoes.
- 3-4 garlic cloves, whole, crushed.
- to taste Salt.
- A few sprigs of thyme.
- A few sprigs of oregano.
- Olive oil, a good amount.
- 3-4 shallots, peeled and cut in half.
Step by step how to cook Roasted Herby Potatoes:
- Preheat oven to 200c..
- Wash the potatoes and poke each potato with the tip of the knife. Add to an ovenproof dish..
- Then add the shallots and drizzle with olive oil and sprinkle with some salt..
- Roast for 40-45 minutes..
- Remove the potatoes from the oven..
- In a small saucepan add a good amount of olive oil and garlic and heat. Fry for 2 minutes then add the oregano and thyme cook until the garlic start to just about turn brown and remove from the heat..

- Next pour all the contents from the saucepan over the potatoes and return back to the oven for a further 10 minutes..
