Ingredients for Tandoori Aloo:

  1. 1 kg Baby Potatoes.
  2. Cumin seeds 1 tbsp roasted.
  3. Coriander seeds 1/4 tsp roasted.
  4. 2-3 Green cardamom seeds.
  5. 1 tbsp Kashmiri red chilli powder.
  6. to taste Salt.
  7. Pinch turmeric powder.
  8. 1 tbsp ginger and garlic paste.
  9. 1 tbsp Lemon Juice.
  10. 1 tsp chilli flakes.

Step by step how to cook Tandoori Aloo:

  1. Add the spices to a mixer Jar and Grind everything to a smooth paste using 1 tbsp oil and little water..
  2. Now par boil baby potatoes in salted water ( cook almost 60%.
  3. A per your choice you can leave them whole or cut them into halves..
  4. In a larger mixing bowl add the potatoes, above paste, Lemon Juice, chilli flakes, 2 tbsp corn flour and the heaped tbsp of gram flour. (add flour if required only little at a time).
  5. Mix everything very well. Now in a pan heat 1 tbsp oil add a few carom seeds and let them sizzle, add 1 tsp chopped garlic and cook only a little. Pour the oil onto the potatoes and mix well..
  6. If you feel the masala is dry sprinkle water to make sure each potato is coated well. Marinate for minimum of an hour or longer the better..
  7. Attach them to skewers and cook them on Gas, tandoor, bbq or an oven. Enjoy with lacha onions, spicy chutney and fresh slice of lemon with a sprinkle of chat masala on the potatoes..
