Ingredients for Whole Wheat Jaggery Fruit Cake:

  1. 2 cup whole wheat flour.
  2. 1 cup jaggery.
  3. 3/4 cup oil.
  4. 1 cup curd.
  5. 11/2 tsp baking soda.
  6. 11/2 tsp baking powder.
  7. 1/2 tsp cinnamon powder.
  8. 1 tbsp chopped dates.
  9. 1 tbsp fig.
  10. 1 tbsp raisins.
  11. 1 tbsp tuttifrutti.
  12. 2 tbsp chopped nuts(badam and kaju).
  13. 1/2 cup orange juice(you can use any juice).

Step by step how to cook Whole Wheat Jaggery Fruit Cake:

  1. Soak fig,dates,raisins,tuttifrutti in orange juice.
  2. Butterline the baking tray.
  3. Preheat oven at 160 degree.
  4. Add dry ingredients...wheat flour,baking powder and baking soda and mix it.
  5. Whisk curd and add oil in it.
  6. Microwave jaggery at high temperature for 30 sec for melting.
  7. Add soak fruits in the flour mixture and mix it nicely.
  8. Add melted jaggery in the curd mix.
  9. Mix it nicely...
  10. Add flour mix in curd jaggery mix in batches.
  11. Transfer the batter in the prepared baking tray and sprinkle the chopped nuts and bake it in oven at 160 degree for 20 min or till the toothpick inserted comes out clear.
