Ingredients for Egg Salad SXSW style:
- 1 cup mayonnaise.
- 1 tbsp sweet relish.
- 1/4 tsp dry mustard powder.
- 2 dash celery seed.
- 1 tbsp hatch chile mustard.
- 1 large red banana pepper minced.
- 1 large orange banana pepper minced.
- 1 small jalopeno "the canned kind" minced.
- 1 dash lime juice.
- 1 salt and pepper.
- 12 large Brown Cage Free Eggs (the best eggs are free roaming, No hormones, no antibiotics fed to chickens.
Step by step how to cook Egg Salad SXSW style:
- Put eggs in large pot of water and bring to boil.
- When pot comes to large rolling boil, remove from burner let sit for 10 minutes.
- While eggs are steeping, put a lot of ice in a large bowl.
- After 10 minutes drain water from pot, put eggs in ice bowl and add water to completely cover eggs.
- When eggs are cold, peel and seperate yolk from white parts and put in seperate bowls. Don't forget that cats love eggs. They will tell you how much they want!.
- With large fork, mash whites and yolks.
- In a seperate bowl put mayo, mustard, mustard powder, celery seed, salt and pepper to taste, rice vinegar, relish and mix together.
- Add both the yolk and whites then mix well..
- Put peppers, onions, lime juice, salt and pepper together and mix well..
- Combine remaining ingredients and mix well. You may want to eat some first. Put in large glass bowl with tight fitting lid. This should keep for a good week in the coldest part of fridge for everyone in your household! Use your favourite bakery bread to spread egg salad and enjoy!.
