Ingredients for Momma’s Tater Salad:
- About 4 medium potatoes or 2# red potatoes.
- 1 1/2 cups your favorite mayonnaise (give or take on how you like).
- 4 tablespoons yellow or Dijon mustard.
- 1/2 red onion chopped fine.
- 1/2 sweet onion chopped fine.
- 1/2 teaspoon black pepper (or to taste).
- 1/2 teaspoon smoked paprika (or regular if you’re out).
- 20 (or so) slice dill (or favorite) pickle chopped.
- 2 tablespoons (3ish for me) pickle juice.
- 4 boil eggs chopped.
- 3 celery stalks chopped fine.
- 1/2 tablespoon onion powder.
- 1/2 tablespoon garlic powder.
Step by step how to cook Momma’s Tater Salad:
- Chop potatoes bite size, boil with teaspoon salt until fork tender, not mushy.
- In a bowl add chopped eggs, celery,onions, pickles, mix, add pepper paprika, garlic and onion powder, fold in mayonnaise, pickle juice, mustard.
- After potatoes are done drain and cool when cool put in big bowl and fold in mayonnaise mixture.
- Sprinkle paprika on top and chill couple hours or over night.
