Ingredients for Quick Heaven's Lemon Meringue Pie:

  1. 225 grams plain flour.
  2. 3 teaspoons icing sugar.
  3. 140 grams butter.
  4. 1 number egg yolk.
  5. 2 - 3 teaspoons water approx.
  6. 75 grams cornflour.
  7. 210 grams sugar castor / granulated.
  8. 1/2 cup lemon juice.
  9. 1 1/4 cups water.
  10. 3 numbers egg yolks.
  11. 2 teaspoons lemon rind.
  12. 60 grams cooking butter.
  13. 4 numbers egg whites.
  14. 1/2 cup caster sugar.

Step by step how to cook Quick Heaven's Lemon Meringue Pie:

  1. For the pie crust, first grease your pie dish with butter or oil nicely..
  2. In a bowl, crumble the flour wih butter as you do for apple pie, till you get fine crumbs. Add the yolk, and slowly knead with the water. Turn to a smooth surface and nicely with gentle movements knead to a firm dough. Wrap in a cling film and rest in for minimum 30 minutes to get set..
  3. Then,dust the and take out the dough. Meanwhile preheat your oven to 200°C for 10 minutes. Roll slowly into a 1 inch thick circle,dont worry iif sides crack a little. Be careful to dust as required, and then slowly roll the crust over the rolling pin and onto the pie dish..
