Ingredients for Antioxidant Soup:
- 1 tbsp olive oil, extra virgin.
- 2 medium white onions (diced).
- 2 large sweet potatoes.
- 45 oz kidney beans (drained).
- 1/3 tsp oregano.
- 76 oz carton low sodium chicken broth.
- 2 1/2 tsp sea salt.
- 2 tsp ground cumin.
- 1 tsp ground black pepper.
- 1 lb fresh baby spinach.
- 1/2 lb fresh kale (chopped).
- 4 large chicken breasts (cooked and chopped).
- 1 large red bell pepper (diced).
- 1 tsp grated parmesan cheese.
Step by step how to cook Antioxidant Soup:
- Heat oil in large pot over medium-high heat. Saute onions for 5 minutes..
- Stir in remaining ingredients except parmesan cheese, and bring to boil.
- Reduce heat, cover and lightly boil until sweet potatoes are soft. Approximately 12 to 15 minutes.
- Sprinkle bowl of soup with parmesan cheese and serve..
