Ingredients for potatoe and egg salad:
- 3 large potatoes.
- 3 eggs.
- 1/4 onion.
- 1 mayonnaise.
- 1 salt and pepper.
- 2 tbsp yellow mustard.
Step by step how to cook potatoe and egg salad:
- Cut peeled potatoes into chunks and cook until fork tender then drain. While the potatoes are cooking boil the eggs. While the eggs are cooking dice up the 1/4 onion and add to the chilled potatoes..
- When the eggs are done..peel and add to the potatoes and onions. Add mayo to all three ingredients according to your desired consistency..
- Mix together mashing the potatoe and eggs so they they still have a few chunks. Last add about 1-2 tbsp of mustard. Salt and pepper to taste..
- Refrigerate for at least an hour but longer if possible..
