Ingredients for Roasted Herby Potatoes:

  1. 8-10 Baby new potatoes.
  2. 3-4 garlic cloves, whole, crushed.
  3. to taste Salt.
  4. A few sprigs of thyme.
  5. A few sprigs of oregano.
  6. Olive oil, a good amount.
  7. 3-4 shallots, peeled and cut in half.

Step by step how to cook Roasted Herby Potatoes:

  1. Preheat oven to 200c..
  2. Wash the potatoes and poke each potato with the tip of the knife. Add to an ovenproof dish..
  3. Then add the shallots and drizzle with olive oil and sprinkle with some salt..
  4. Roast for 40-45 minutes..
