- 1 1/2 cup sliced zucchini (about 2 small).
- 1 small onion sliced.
- 2 tbsp olive oil.
- 1/2 tsp red pepper flake.
- 1 salt and pepper to taste.
- 1/2 cup grated parmesan cheese (plus a little more for garnish).
- 1 1/2 cup grape tomatoes, sliced in half.
- 1 1/2 cup uncooked whole grain pasta (I like rotini or penne... and you can use reg pasta also).
