- 1 tsp Baking soda.
- 2 tsps Baking powder.
- 1 cup yoghurt.
- 1 cup sugar brown.
- 1/2 cup cooking butter.
- 1 tsp Vanilla bean powder.
- 2 tbsps orange zest (valencia ).
- 1/2 cup orange juice fresh.
- 1/2 cup milk.

Step by step how to cook Zesty Orange Tea Cake (eggless):
- Pre heat oven at 180 C or 350 F.
- Grease 9" cake tin with butter and sprinkle APF evenly in the tin..
- Add all wet ingredients except yoghurt in a large bowl and mix them well with a hand blender with whisk attachment.
- Sieve AFP, baking soda and baking powder and add Vanilla bean powder and orange zest.
- Keep adding spoonful of the flour mix in the wet mixture with yoghurt, milk and orange juice..
- Don't whisk too much, just all ingredients should be incorporated well without any lumps..
- Bake for 45 mins at 180 C or 350 F until cake tester comes out clean.
- Cake tip: All ingredients should be at room temperature.
The cake is perfectly balanced with just enough orange flavour, balanced with light sweetness. The cake has a nice orange flavor and while baking the whole house smelled heavenly! The recipe is more or less similar to my Eggless Vanilla Cupcake except I replaced milk with pure orange juice and added a tsp of orange zest.
