Ingredients for Zuppa Toscana Soup instant pot:

  1. 1 lb Italian sausage.
  2. 3 medium russet potatoes (unpeeled and diced).
  3. 1 small onion diced.
  4. 4 strips thick bacon (cooked and diced).
  5. 2 cups kale (veins removed and sliced thin like ribbons).
  6. 5 cups chicken broth.
  7. 1 cup heavy cream.
  8. to taste Salt & pepper.
  9. 3 cloves garlic.

Step by step how to cook Zuppa Toscana Soup instant pot:

  1. Sauté sausage in instant pot.
  2. Add bacon, garlic and onion, sauté 2-3 minutes or until soft.
  3. Turn sauté off and drain extra grease.
  4. Add chicken broth and potatoes to the pot.
  5. Place lid on instant pot, close valve (seal) and set manual timer to 4 minutes.
  6. The pot will take some time to come to pressure-once at pressure it will count down from 4 minutes.
  7. Once the pot beeps (finished) allow the pressure to release naturally for 10 minutes then do a quick release.
  8. Add the kale, stir and let it sit a few minutes until it wilts.
  9. Stir in the heavy cream and season with salt and pepper.
